It's official! Fall is here! I don't know about you, but allergies aside, I adore fall. The temperatures cool down, the leaves start to change, the breeze has just a little nip and the smells of the changing seasons are in the air. And the apples. There is nothing quite like the smell of an orchard loaded with apples.

Apples are a versatile fruit, widely available in many varieties, something that you can eat straight from the tree or take to a pan. We like them in every way imaginable around here. Desserts aside, my favorite way to enjoy apples is with pork. You know how sage is the perfect compliment to poultry? Apples are the perfect compliment to pork. Many people enjoy a simple apple sauce with pork chops and stuffing, but I like to take it a little further...

Skillet Pork with Sweet Spiced Apples

4 Center Loin Chops
2 Tbsp Olive Oil
2 Apples (if small, 4)
4 Tbsp Butter
4 Tbsp Sugar
1 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Salt

Pork Chops with Apples and Onions - Cooking For My Soul

Start by heating the oil over medium-high heat in a non-stick skillet. Season the pork chops lightly with salt and pepper, then add them to the pan. Don't worry, you are not cooking the pork chops through at this point, you are simply searing them a bit on the outside. Let the chops brown on each side and remove them from the pan.

While the chops are browning, core and thinly slice your apples. Reduce the heat on the pan to low-medium and add the butter. Once the butter melts, add the apples and remaining ingredients. Stir to mix everything well, return the chops to the pan and cover. Simmer 15 - 20 minutes, or until the pork and apples are cooked through, stirring occasionally.
